Pomegranate Smoothie

I tried a pomegranate / banana smoothie last night. Opened up 2 pomegranates (that I bought real cheap as they were on the “we are about to throw these out” table) and put all the seeds in my blender, as well as some of the fibrous material found around the seeds. Then added a couple of old bananas and some water.

Probably very healthy, but too frothy for my liking. One recipe that I looked up afterwards suggested almond milk instead of water. I’ll try that the next time.

Blueberries

Blueberries are a group of flowering plants in the genus Vaccinium, sect. Cyanococcus. The species are native to North America and eastern Asia. No-Bake Frozen Lemon Cheesecake with Blueberries

CRUST:

  • 21 1-1/2-inch (4 cm) square shortbread cookies, ground fine 21
  • 2 tbsp granulated sugar 30 mL
  • 3 tbsp Imperial Margarine, melted 45 mL

FILLING:

  • 2 pkg (8 oz / 250 g each) cream cheese, at room temperature 2 pkg
  • 1 1/2 cups granulated sugar 375 mL
  • 3 tbsp grated fresh lemon peel 45 mL
  • 1/2 cup fresh lemon juice 125 mL
  • 1 tbsp vanilla extract 15 mL
  • 2 cups whipping cream 500 mL
  • blueberries, for decoration (if desired)

To make crust: Grease 9-inch (2.5 L) springform pan. In medium bowl, stir shortbread crumbs and sugar. Add margarine; stir until damp and crumbly. Pour into prepared pan. With your fingers, press mixture firmly into pan bottom. Set aside while making filling.

To make filling: With electric mixer at medium-high speed, beat cream cheese until smooth, soft and fluffy, scraping sides of bowl often, about 5 minutes. Add 3/4 cup (175 mL) sugar and the lemon peel; beat until fluffy. Scrape down sides. With mixer at medium speed, gradually beat in lemon juice and vanilla until well blended.

In another bowl, with mixer at high speed, beat heavy cream and remaining 1/2 cup (125 mL) sugar until stiff. With rubber spatula, gently fold whipped cream into cream-cheese mixture until blended. Pour into crust; smooth top. Cover with foil and freeze at least 8 hours, or overnight, until frozen. Remove from freezer 1/2 hour before serving. To serve, loosen sides of cake with thin metal spatula dipped in hot water. Remove pan sides. Place cake on plate. Decorate cake with whole berries. Serves 8-10.

1. Remember, serving sizes are small – 1/2 cup (125 mL) of chopped vegetables or fruit; or 1 cup (250 mL) of salad greens are all you need for one serving.

2. Add fruit to your morning cereal or oatmeal (i.e. strawberries or blueberries).

3. Make a fruit smoothie for breakfast or for a snack during the day.

4. Buy packaged ready-cut veggies or prepare them ahead of time for quick snacks (i.e. celery sticks, green pepper strips).

5. Snack on individually packaged fruit cups during the day. Choose fruit cups that are packed in their own juice.

6. Add a variety of vegetables (i.e. chopped spinach or green peppers) to your favourite tomato sauce.

7. Make sure the fruit juice you buy is 100% pure fruit juice.

8. Eat a 1/4 cup (50 mL) dried fruit as a snack.

9. Snack on veggies and dip and keep them handy for your kids.

The 5 to 10 a day website’s goal “is to reduce the risk of cancer and cardio-vascular disease, by encouraging Canadians to consume at least five servings of vegetables and fruit a day as part of a healthy diet (as described in Canada’s Food Guide to Healthy Eating), and as part of a healthy lifestyle. The aim of the campaign is not only to create awareness, but also to change people’s eating habits, within a healthy, active lifestyle.”

Sad Statistics: While 87% of Canadians know that eating vegetables and fruit can help prevent certain diseases, only 25% are eating the recommended 5-10 servings of vegetables and fruit each day, according to a survey conducted as part of the 5 to 10 a day healthy eating campaign.

I spent some time at their website today, and appreciated their easy to navigate, fact filled pages. They use a fruit/vegetable colour scheme to encourage variety (red, green,white/tan/brown, yellow/orange, and blue/purple) and include some tips on how to get your children to participate. There are articles, recipes, tips, and a “Did you know?” section.
